BRAZO DE MERCEDES ✔️Meringue 10 egg whites [arge size] 1/4 tsp cream of tartar [1 gram] 1/2 cup sugar [100 grams] ✔️Filling 10 egg yolks [large size] 1/2 tsp vanilla extract [2.5 ml] 1 can sweetened condensed milk [300 ml] •Rectangle Baking Pan size: 16 inch (length) x 12 inch (width) x 0.75 inch (depth) •Bake the meringue in a preheated oven @ 170 C for 30-40 mins. or until brownish top. •Baking time & temperature may vary on the type & function of the oven. I used conventional oven with bottom heat function only. •For oven with dual (bottom+top) heat function, it tends to bake faster so reduce the specified baking time accordingly. ✏️TIPS TO AVOID A FAIL MERINGUE 1. Update : I apologized I used 1 cup of unsalted butter to make the icing not 2 cups as it says on the video. But you may used 2 cups for thicker icing if you like. Meringue 7 egg whites 1/2 cashew 1/2 cup granulated sugar 1 tsp vanilla extract 1 tsp cream of tartar If you don't have cream of tartar you may use 1 tbsp vinegar - add this after you added the vanilla extract 4 tbsp cornstarch - mix this with the cashew and put in the Meringue and fold Make it at least 2 cm thick round after you flatten the top of the Meringue on the baking pan with parchment paper or silicon baking sheets. You don't have to make 4 little sans rival just Like I did on the video and use all the Meringue for the cake. The reasons behind the 4 little Meringues is to show that you can make one like Silvanas or a bite size if you decided to bring it to a potluck. I used the same recipe as my Sylvanas and just added a bit more butter. If you made one before this one should be easy. I made a bigger batch of the buttercream but I end up having a lot extra so I will not recommend making a double recipe😬 I used 1 full sheet Pam to pipe 3 meringue discs and used 1/2 sheet pan for the other can easily make 6 discs but 5 works just fine. Depending on your oven mine takes 40-45 minutes to bake my meringue. Just make sure you check the color of your meringue it needs to be light golden brown and it should be crispy. Associated with Michael Lim This is a remake of my very first video. My version uses less sugar (a balance of sweetness and flavor is what I prefer). **Video Correction ** 1 teaspoon "Cornstarch for Filling" should be "For Meringue" Ingredients FILLING 3/4 c sweetened condensed milk 10 egg yolks 1 tsp vanilla extract 1/8 tsp lemon extract 2 Tbsp butter (sweet cream salted) MERINGUE 14 egg whites (room temperature) 1 tsp vanilla 1 tsp cream of tartar 1 tsp cornstarch 1/2 tsp baking powder 1 1/2 c granulated sugar IN ADDITION 1/4 c cornstarch for dusting cooking spray or 1/3 c vegetable oil Brown paper - 2 inches larger than pan Half Sheet Baking Pan (11.25x 16.25) Brown Paper/ Kraft Paper ***************************************** DIRECTIONS Preheat oven at 325 degrees F Note: I always use an oven thermometer to make sure the temperature is accurate. I use an electric oven which is the basis for my baking time. Adjust accordingly. Line baking sheet with brown paper and heavily grease with cooking spray or brush with vegetable oil. Set aside. MERINGUE Beat egg whites at low speed for 2-3 minutes. When bubbles form at the edge of the bowl, add cream of tartar, baking powder and cornstarch. Increase speed gradually to medium, then high until soft peeks. Add sugar gradually. Beat at high until firm peaks. Add vanilla extract, beat until incorporated. Spread meringue evenly with an offset spatula into the prepared baking pan. Use icing comb or fork for a final finish. Bake at 325 degrees F for 1 hour and 10 mins. CUSTARD FILLING Combine egg yolks and condensed milk in a sauce pan or on a double boiler. Cook and stir continuously until thick or of spreading consistency. Add Butter and vanilla extract, blend well. Place wax paper over serving platter, extend to fit baking pan. Dust with cornstarch. Loosen paper lining from baked meringue and spread filling evenly. Roll carefully. Dust with cornstarch. Cover with foil and refrigerate overnight. Best served cold. Enjoy! I hope you will find success with your version as well. The ingredients: —Meringue— 10 Egg Whites 1/2 cup (105g) White Sugar 1/2 tsp Cream of Tartar 1 tsp (6 grams) Vanilla Essence —Custard Filling— 10 Egg Yolks 1 Can Condensed Milk (adjust according to your desired level of sweetness) 1 tsp (6 grams) Vanilla Essence **Icing Sugar or snow powder for dusting to prevent the parchment paper from sticking to the meringue cake.
