My version uses less sugar (a balance of sweetness and flavor is what I prefer). I use 1 1/2 cups sugar for 14 extra large egg whites. I dust it with corn starch not powdered sugar. As far as the filling, I use 10 extra large egg yolks and 3/4 cup condensed milk. I tweaked these proportions for a long time until I was happy. I add 2 Tbsp of butter and 1 tsp vanilla and a hint of lemon to the filling at the end. I hope you will find success with your version as well. Enjoy and Good Luck! Note: I always use an oven thermometer to make sure the temperature is accurate. I use an electric oven which is the basis for my baking time, bake at 325 degrees F for 1 Hr and 10 mins. For the love of UBE! Ube has been my favorite because of it's unique aroma. I used it in almost dessert i could remember. This Ube Brazo recipe that I will share is a bomb. Here is the complete ingredients and some baking tips: Brazo meringue: 8 egg whites 1/2 teaspoon cream of tartar 1/2 cup granulated sugar 1 tablespoon concentrated ube flavoring Brazo filling: 6 egg yolks 1 can condensed milk 1/4 cup milk (fresh or evap) 1 cup mashed ube 1 tablespoon concentrated ube flavoring Bake at 170 C for 15-20 minutes. I used 9x13 baking pan in this recipe. Baking tips: 1. We will start whipping egg whites on low speed for 2 minutes to prevent big air bubbles that will cause our meringue to shrink. 2. `Always use new eggs for baking, approximately 5 days old egg. 3. Make sure that your bowl and beater are dry and clean. 4.Only use metal or glass bowl for mixing because plastic bowl can easily absorb grease and fat that can prevent the volume of the meringue. How to make Yema Spread |Custard Spread | Custard Filling for Brazo de Mercedes
Yema Spread Ingredients: 306 ml Condensed milk 5 egg yolks 155 ml evaporated milk 1/8 cup butter or margarine 1 tsp calamansi juice or lemon juice 1/2 tsp vanilla extract Procedure: 1) in a pan combine condensed milk, evaporated milk, calamansi juice and vanilla extract. 2) Mix until well combined 3) Cook over low heat and stir constantly. Cook for 45-50 minutes or until the texture is smooth and thick. 4) When the mixture is smooth and thick turn the heat off and add the butter. Mix until melted and blended to the mixture. 5) Set aside and let it cool completely 6) When it is completely cooled transfer the Yema spread into the sterilized jar. 7) Best Served with bread, biscuits, graham crakers or sponge cake. In this recipe I made 1 medium sized jar and 1 small sized jar. If you want to make big batches of Yema Spread you can just double the recipe. You can sell this for P60-P80 for the small sized jar and P120-P140 for the medium sized jar. But you have to make a detailed costing because the prices of the other brands are different. Some are expensive and some are cheap. For this recipe I used F&N condensed milk. I bought mine for P27. It is not too sweet but you can also use Doreen and Jersey condensed milk. The slighly pricey brands but really sweet are Liberty, Carnation and Milkmaid. You can improve this recipe just add or remove some of the ingredients. And you can add other flavor like ube, Chocolate or Cheese. Just be sure that the product will not be spoiled. The shelf life is 1 week or 1 month if you store it inside the fridge(chiller). The lemon juice acts as a natural preservative. Ways to prevent food from spoiling are to make sure that all the utensils that you are using should be clean. Jars should be sterilize especially if you will make this for business. You can seal your jars using shrinkable film and a heat gun. Yema spread is a combination of Yema and Custard filling of Brazo de Mercedes. This can be a souvenier or giveaways for birthdays or weddings. For the eggwhites make a merigue or egg drop soup! My version uses less sugar (a balance of sweetness and flavor is what I prefer). **Video Correction ** 1 teaspoon "Cornstarch for Filling" should be "For Meringue" Ingredients FILLING 3/4 c sweetened condensed milk 10 egg yolks 1 tsp vanilla extract 1/8 tsp lemon extract 2 Tbsp butter (sweet cream salted) MERINGUE 14 egg whites (room temperature) 1 tsp vanilla 1 tsp cream of tartar 1 tsp cornstarch 1/2 tsp baking powder 1 1/2 c granulated sugar IN ADDITION 1/4 c cornstarch for dusting cooking spray or 1/3 c vegetable oil Brown paper - 2 inches larger than pan Half Sheet Baking Pan (11.25x 16.25) Brown Paper/ Kraft Paper ***************************************** DIRECTIONS Preheat oven at 325 degrees F Note: I always use an oven thermometer to make sure the temperature is accurate. I use an electric oven which is the basis for my baking time. Adjust accordingly. Line baking sheet with brown paper and heavily grease with cooking spray or brush with vegetable oil. Set aside. MERINGUE Beat egg whites at low speed for 2-3 minutes. When bubbles form at the edge of the bowl, add cream of tartar, baking powder and cornstarch. Increase speed gradually to medium, then high until soft peeks. Add sugar gradually. Beat at high until firm peaks. Add vanilla extract, beat until incorporated. Spread meringue evenly with an offset spatula into the prepared baking pan. Use icing comb or fork for a final finish. Bake at 325 degrees F for 1 hour and 10 mins. CUSTARD FILLING Combine egg yolks and condensed milk in a sauce pan or on a double boiler. Cook and stir continuously until thick or of spreading consistency. Add Butter and vanilla extract, blend well. Place wax paper over serving platter, extend to fit baking pan. Dust with cornstarch. Loosen paper lining from baked meringue and spread filling evenly. Roll carefully. Dust with cornstarch. Cover with foil and refrigerate overnight. Best served cold. Enjoy! I hope you will find success with your version as well. Yields: 1 Brazo De Mercedes log Baking Temp: 350df Baking Time: 20 mins Pan size: 12.5 inch x 17 inch Ingredients: Meringue: 10 egg whites 1 tsp cream of tartar 200g white sugar Custard: 1 large can of condensed milk 30g butter 115g (or ml) water 10 egg yolks 1 vanilla pod or 2 tsp vanilla extract His guys. I few notables and pointers I'd like to repeat. 1. Make sure your utensils you'll use for the meringue are clean. I don't want you guys to waste 10 good egg yolks. Be careful not to tear the yolks when separating the yolks and the whites. 2. When whipping the egg whites, always start on low before turning it up to medium and then high. Whipping time may vary. Could be 15 mins or longer. You'll know it is ready when you reach the stiff peak stage. 3. If the yolk tear while with the white, you can't use that for the meringue anymore. So have 3 containers ready. One for the yolk, one for the whites, and one where you will initially crack them in. This way, if you accidentally tear the yolk, you're only messing one egg and not the entire batch. 4.
