Associated with Michael Lim To view complete and updated version go to Made an instruction video for my sister who wants to know what makes the meringue stable in the Brazo that I make. My version uses less sugar (a balance of sweetness and flavor is what I prefer). I use 1 1/2 cups sugar for 14 extra large egg whites. I dust it with corn starch not powdered sugar. As far as the filling, I use 10 extra large egg yolks and 3/4 cup condensed milk. I tweaked these proportions for a long time until I was happy. I add 2 Tbsp of butter and 1 tsp vanilla and a hint of lemon to the filling at the end. I hope you will find success with your version as well. Enjoy and Good Luck! Note: I always use an oven thermometer to make sure the temperature is accurate. I use an electric oven which is the basis for my baking time, bake at 325 degrees F for 1 Hr and 10 mins. My version uses less sugar (a balance of sweetness and flavor is what I prefer). **Video Correction ** 1 teaspoon "Cornstarch for Filling" should be "For Meringue" Ingredients FILLING 3/4 c sweetened condensed milk 10 egg yolks 1 tsp vanilla extract 1/8 tsp lemon extract 2 Tbsp butter (sweet cream salted) MERINGUE 14 egg whites (room temperature) 1 tsp vanilla 1 tsp cream of tartar 1 tsp cornstarch 1/2 tsp baking powder 1 1/2 c granulated sugar IN ADDITION 1/4 c cornstarch for dusting cooking spray or 1/3 c vegetable oil Brown paper - 2 inches larger than pan Half Sheet Baking Pan (11.25x 16.25) Brown Paper/ Kraft Paper ***************************************** DIRECTIONS Preheat oven at 325 degrees F Note: I always use an oven thermometer to make sure the temperature is accurate. I use an electric oven which is the basis for my baking time. Adjust accordingly. Line baking sheet with brown paper and heavily grease with cooking spray or brush with vegetable oil. Set aside. MERINGUE Beat egg whites at low speed for 2-3 minutes. When bubbles form at the edge of the bowl, add cream of tartar, baking powder and cornstarch. Increase speed gradually to medium, then high until soft peeks. Add sugar gradually. Beat at high until firm peaks. Add vanilla extract, beat until incorporated. Spread meringue evenly with an offset spatula into the prepared baking pan. Use icing comb or fork for a final finish. Bake at 325 degrees F for 1 hour and 10 mins. CUSTARD FILLING Combine egg yolks and condensed milk in a sauce pan or on a double boiler. Cook and stir continuously until thick or of spreading consistency. Add Butter and vanilla extract, blend well. Place wax paper over serving platter, extend to fit baking pan. Dust with cornstarch. Loosen paper lining from baked meringue and spread filling evenly. Must try, delicious 😋 Ingredients: For the Meringue 10 egg whites (room temperature) 3/4 cup white sugar 1/2 tsp cream of tartar For the filling (egg custard) 10 egg yolks 1 can condensed milk (any brand) 1 tsp vanilla extract 2 tbsp butter We will also be needing Powder/Icing Sugar & Oil spray Bake at Preheated oven for 20-22 mins at 350 °F or 176 °C. ENJOY ❤️ 📍TIPS ✏️ The meringue bowl must be grease free, it means NO oil, butter or else we can’t achieve good meringue. ✏️ Grease all sides of the pan generously. So the meringue will not stick too much on the baking paper, it’s more easier to peel, but be careful removing the baking paper. Breaking the meringue? No worries you will cover it with egg custard. ✏️ Separate the eggs one by one in the separate small bowl, then put it in the mixing bowl. This way, you will not risk the whole batch of egg whites when a yolk accidentally taint in it. Egg yolk in the egg whites? How to make Yema Spread |Custard Spread | Custard Filling for Brazo de Mercedes
Yema Spread Ingredients: 306 ml Condensed milk 5 egg yolks 155 ml evaporated milk 1/8 cup butter or margarine 1 tsp calamansi juice or lemon juice 1/2 tsp vanilla extract Procedure: 1) in a pan combine condensed milk, evaporated milk, calamansi juice and vanilla extract. 2) Mix until well combined 3) Cook over low heat and stir constantly. Cook for 45-50 minutes or until the texture is smooth and thick. 4) When the mixture is smooth and thick turn the heat off and add the butter. Mix until melted and blended to the mixture. 5) Set aside and let it cool completely 6) When it is completely cooled transfer the Yema spread into the sterilized jar. 7) Best Served with bread, biscuits, graham crakers or sponge cake. In this recipe I made 1 medium sized jar and 1 small sized jar. If you want to make big batches of Yema Spread you can just double the recipe. You can sell this for P60-P80 for the small sized jar and P120-P140 for the medium sized jar. But you have to make a detailed costing because the prices of the other brands are different. Some are expensive and some are cheap. For this recipe I used F&N condensed milk. I bought mine for P27. It is not too sweet but you can also use Doreen and Jersey condensed milk. The slighly pricey brands but really sweet are Liberty, Carnation and Milkmaid. You can improve this recipe just add or remove some of the ingredients. And you can add other flavor like ube, Chocolate or Cheese. Just be sure that the product will not be spoiled. The shelf life is 1 week or 1 month if you store it inside the fridge(chiller). The lemon juice acts as a natural preservative. Ways to prevent food from spoiling are to make sure that all the utensils that you are using should be clean. Jars should be sterilize especially if you will make this for business. You can seal your jars using shrinkable film and a heat gun. Yema spread is a combination of Yema and Custard filling of Brazo de Mercedes. This can be a souvenier or giveaways for birthdays or weddings. For the eggwhites make a merigue or egg drop soup!
