Brazo de Mercedes Yield: 1 Roll (Quarter Sheet Pan- 12” x 9” x 1”) Baking Time: 28 – 30 minutes (after baking, turn off the oven and use a wooden spatula to keep the oven’s door ajar. Let the baked meringue sit for 5- 7 minutes in the oven before taking out to prevent the baked meringue from shrinking) Baking Temperature/Preheat: 350 degrees Fahrenheit Method of Preparation: Angel Food (Egg Foam)/ Stirred Custard (filling) Ingredients Meringue 120 grams Egg Whites (from 4 large eggs at room temperature) 112 grams (1/2 cup) Granulated White Sugar ¼ teaspoon Cream of Tartar ½ tablespoon Cornstarch Confectioner’s Sugar (for dusting) Custard Filling 4 Egg yolks ½ cup Condensed Milk 1/8 cup Evaporated Milk Dash of Salt 1/8 tsp Lemon or Calamansi Rind (optional) 1 teaspoon Vanilla 2 tablespoons Unsalted Butter Demo Link: https://youtu.be/c9RKtUoA7DM Instructions 1. Grease the pan with oil or vegetable shortening and line it with parchment paper. 2. Obtain the 4 whole eggs and separate the egg yolks from the egg whites. Cover the egg whites with a plastic wrap and set aside. 3. To make the custard filling, combine the following ingredients in a heat resistant and non-reactive mixing bowl: egg yolks, condensed milk, evaporated milk, salt, lemon/calamansi rind, and vanilla. Whisk until the mixture becomes homogeneous 4. Place the custard mixture over a pot (with a lid slightly smaller than the bottom of the mixing bowl) of hot water and cook under low-medium heat. Stir the custard mixture continuously throughout the cooking process. Custard is ready when it is thick and begins to pull away from the mixing bowl. 5. Remove the cooked custard from the heat source. Add the butter and whisk. Optional: Pour custard through a fine mesh into a clean bowl. 6. Place over an ice bath and cool the custard. After cooling, store in the fridge until ready to use. 7. To make the meringue, beat the egg whites at high speed until foamy. Add cream of tartar and continue beating at high speed. 8. Next, add the sugar in a steady stream while beating still beating at high speed. Continue beating until stiff peaks (but not dry) form. Finally, add the cornstarch and continue beating until there are no more traces of cornstarch. 9. Pan the meringue on a greased and lined tray that we prepared earlier. Use an offset spatula to even out the meringue. Tap the pan to release the air bubbles. You may use a cake comb to etch pattern on the surface of the meringue. 10. Bake the meringue (center rack) at 350 degrees Fahrenheit for 28 – 30 minutes. 11. After baking, turn off the oven and slip a wooden spatula into your oven door to keep it ajar. Let the baked meringue sit in the oven for 5 – 7 minutes before taking it out. 12. After 5 – 7 minutes, dust the surface of the meringue with confectioner’s sugar. Place a parchment paper sheet (a bit larger than the pan in size) on top of the meringue and invert the pan. Peel off the parchment lining to expose the bottom of the baked meringue and spread or pipe the custard filling. 13. Roll the meringue and allow it to cool at room temperature (10-15 minutes). How to Make Filipino-style Floating Island Dessert Ingredients: For the Ube Halaya 1 package (16 ounces) frozen grated ube, thawed 1 can (13.5 ounces) coconut milk 1 can (14 ounces) condensed milk 1 can (12 ounces) evaporated milk 1/2 cup butter 1 cup sugar 2 drops ube extract (optional) 1 cup processsed American cheese, shredded For the Leche Flan 12 egg yolks 1 can (14 ounces) condensed milk 1 can (12 ounces) evaporated milk For the Meringue 12 egg whites 1 teaspoon cream of tartar 1 cup sugar Instructions: For the Ube Halaya In a wide, heavy-bottomed pan over medium heat, combine grated ube, coconut milk, condensed milk, evaporated milk, condensed milk, butter, and sugar. Bring to a boil, stirring occasionally until sugar is dissolved, butter is melted, and ube is dispersed. Add ube extract, if using, and stir until mixture is evenly colored. Lower heat and continue to cook, stirring regularly, for about 30 to 40 minutes or until a soft, sticky dough forms. Add cheese and stir until melted. Continue to cook for another 10 to 15 minutes or until mixture is thick enough to cling to the back of the spoon and pulls slightly from the side of the pan. Remove from heat and divide equally into the four prepared llaneras. Use an offset spatula to press and flatten the ube evenly. For the Leche Flan In a large bowl, combine egg yolks, evaporated milk, and condensed. Stir in a circular motion until well-blended. Using a fine-mesh sieve or cheesecloth, strain mixture. Using a ladle, evenly pour the flan mixture over the ube halaya base in the laneras up to 3/4 full. Cover the llaneras tightly with aluminum foil and steam for 30 to 40 minutes or until the custard is set and a toothpick inserted in the center comes out clean. Remove from heat and allow to cool before adding merinque layer. For the Meringue Layer In a bowl of a stand mixer, beat the egg whites until frothy. Add the cream of tartar and continue to beat until soft peaks form. Gradually add the sugar and keep beating until the mixture forms firm peaks. Gently spread over the leche flan until each lanera has a heaping mound of meringue on top. Use an offset spatula to smoothen the meringue. Run the tines of a fork lightly on the meringue to make decorative lines. Bake in a 350 F oven for about 15 to 20 minutes or until meringue is golden brown. Keep from opening and closing the oven door to prevent the meringue from deflating. Remove the cake from heat and chill for 8 hours to overnight before serving. Thanks for watching!
