This is a remake of my very first video. My version uses less sugar (a balance of sweetness and flavor is what I prefer).
**Video Correction ** 1 teaspoon "Cornstarch for Filling" should be "For Meringue"
Ingredients
FILLING
3/4 c sweetened condensed milk
10 egg yolks
1 tsp vanilla extract
1/8 tsp lemon extract
2 Tbsp butter (sweet cream salted)
MERINGUE
14 egg whites (room temperature)
1 tsp vanilla
1 tsp cream of tartar
1 tsp cornstarch
1/2 tsp baking powder
1 1/2 c granulated sugar
IN ADDITION
1/4 c cornstarch for dusting
cooking spray or 1/3 c vegetable oil
Brown paper - 2 inches larger than pan
Half Sheet Baking Pan (11.25x 16.25)
Brown Paper/ Kraft Paper

DIRECTIONS
Preheat oven at 325 degrees F
Note: I always use an oven thermometer to make sure the temperature is accurate. I use an electric oven which is the basis for my baking time. Adjust accordingly.
Line baking sheet with brown paper and heavily grease with cooking spray or brush with vegetable oil. Set aside.
MERINGUE
Beat egg whites at low speed for 2-3 minutes.
When bubbles form at the edge of the bowl, add cream of tartar, baking powder and cornstarch.
Increase speed gradually to medium, then high until soft peeks.
Add sugar gradually. Beat at high until firm peaks.
Add vanilla extract, beat until incorporated.
Spread meringue evenly with an offset spatula into the prepared baking pan. Use icing comb or fork for a final finish.
Bake at 325 degrees F for 1 hour and 10 mins.
CUSTARD FILLING
Combine egg yolks and condensed milk in a sauce pan or on a double boiler.
Cook and stir continuously until thick or of spreading consistency.
Add Butter and vanilla extract, blend well.
Place wax paper over serving platter, extend to fit baking pan.
Dust with cornstarch.
Loosen paper lining from baked meringue and spread filling evenly.
Roll carefully. Dust with cornstarch.
Cover with foil and refrigerate overnight.
Best served cold. Enjoy!

No Oven Brazo de Mercedes
Meringue:
10 egg whites
1 cup white sugar
1 tsp white vinegar
1/2 cup powdered sugar
Filling:
5 egg yolks
390g condensed milk
154ml evaporated milk
1 tsp calamansi juice
1 tsp vanilla extract
1 tsp butter/margarine
Procedure:
1) Preheat big pot/cauldron over high heat for 10-15 min.
2) Meringue: Beat egg whites until foamy
3) Add white vinegar. Beat until soft peaks form
4) Gradually add white sugar and beat until stiff peaks form
5) Spread the meringue evenly into the cake pan(with parchment paper)
6) Place a wire rack inside the cauldron/pot
7) Place the cake pan on the wire rack
8) Cover and cook for 15-20 min. over med. heat
9) Turn the heat off. Cover again and let it cool gradually for 30 min. inside
Filling Procedure:
1) Filling: In a pan combine egg yolks, condensed milk, evaporated milk, calamansi juice and vanilla extract.
2) Turn the heat on and cook over low heat.
3) Continue stirring until it's thickened.
4) Turn the off and add butter.
5) Set aside and cool completely.
Assemble:
1) Generously dust the meringue with powdered sugar
2) Place a parchment paper and a wire rack on top
3) Invert and remove the pan
4) Gently peel the parchment paper off
5) Add the filling
6) Roll it
7) Chill or freeze until ready to serve

Making the Frosting:
Before proceeding, make sure the meringue has totally cooled down.
Add softened butter (1 tbsp at a time), beating well after each addition until the mixture is smooth.
***Mixture may look curdled before all of the butter is added but will come back together by the time beating is finished. So keep on beating. If you followed the tips below about butter, they will definitely come together.
Tips:
Make sure to get a good brand of unsalted butter. Not margarine.
Soften butter at room temperature. It should still be cool to the touch, but when pressed using a little pressure, your finger will leave an indentation. If your finger sinks into the butter, then it was overly softened.
