Hello everyone, Here’s the recipe of Brazo De Mercedes. A popular dessert in the Philippines. Must try, delicious 😋
For the Meringue
10 egg whites (room temperature)
3/4 cup white sugar
1/2 tsp cream of tartar
For the filling (egg custard)
10 egg yolks
1 can condensed milk (any brand)
1 tsp vanilla extract
2 tbsp butter
We will also be needing Powder/Icing Sugar & Oil spray
Bake at Preheated oven for 20-22 mins at 350 °F or 176 °C. I used 13 in X 9 in baking pan. Watch the video for the full instructions. Any question? Comment down below. ENJOY ❤️
✏️ The meringue bowl must be grease free, it means NO oil, butter or else we can’t achieve good meringue.
✏️ Grease all sides of the pan generously. So the meringue will not stick too much on the baking paper, it’s more easier to peel, but be careful removing the baking paper. Breaking the meringue? No worries you will cover it with egg custard.
✏️ Separate the eggs one by one in the separate small bowl, then put it in the mixing bowl. This way, you will not risk the whole batch of egg whites when a yolk accidentally taint in it. Egg yolk in the egg whites? BIG NO NO.
✏️ Be gentle while rolling the Brazo, Meringue is fragile.
✏️Use room temperature eggs
✏️You can leave the meringue in the oven after baking (oven off) for 5- 7 mins, give it a time to atleast adjust on the temperature outside.
✏️ Do not over beat the meringue
