How to make confectioners/powder/icing sugar at home

Home Made Brazo De Mercedes


Preheat the oven to 350 degrees Fahrenheit.
Or improvised oven via big cauldron or kawali/casserole with wire rack and 1cup of salt preheat for 10-15minutes.
Prepare square pan 11x11inch or 12x12inch line the bottom with baking paper/wax paper and then grease the side.

beat egg whites using an electric mixer at low to medium speed until soft peaks or foamy form then add the vinegar. Beat until almost stiff

Make the meringue by gradually adding the powdered sugar while mixing the ingredients. Continue mixing until the texture is stiff peak at highspeed settings of hand mixer

Place the meringue on the prepared pan then spread evenly using a spatula. Then make a ripple design using pastry comb or fork.

Bake the meringue for 25 to 35minutes or until the color of the top part turns light to medium brown. At low to medium fire

While the meringue is in the oven, make the filling by combining the egg yolks, water milk powder, brown sugar, flour in a small cooking pot. Apply heat and cook the mixture while continuously stirring until the texture becomes thick.

Add the butter, turn off the heat, and mix thoroughly. Set aside.

Remove the meringue from the oven and cool down for a few minutes.

Sprinkle the confectioners sugar on top of the meringue then place wax paper on the top part of the meringue followed by a similar sized baking pan or tray. The meringue should now be in the middle of two baking trays.

Flip the meringue: the new cookie sheet/baking tray placed on top should now be below. Remove the baking tray and the wax paper then spread the filling over the middle of the meringue.

Roll the meringue. Complete rolling side to side starting at the longest side. Make sure that the layer with filling is rolled inward.

Freeze or at least 5hours before serving

After that, turn them on top of the remaining bread. 6.Using the cutting board to gently press on the sandwich again. 7.Place 2 cups on the cutting board for about 3 to 4 minutes to make the sandwich flat. 8.In a bowl, crack in eggs, season with salt and spoon in the milk.
